At the markets you will see spring produce like; white and green asparagus, artichokes, spring lettuces, and strawberries. The delicate greens and whites mix with the bold and bright red of the strawberry season. French cuisine will incorporate these ingredients in a simple way so as to showcase the freshness of the season.

Getting outside in nature in Provence during the spring season is not only pleasant because of the temperatures, but the landscape is waking up from its winter slumber and bursting with beautiful blooms. You can feast your eyes on a sea of red poppies, or delight in the cherry and almond blossoms as they dance softly in the breeze, or drink in the beauty of wisteria, irises, and Bougainvillea.
