What is more comforting than the aroma of a warm cranberry bread just coming out of the oven when it is blistery outside and a thin layer of icy snow outlines the branches of the pine trees at the edge of the garden?

Cranberries, with their cheerful and bright red colors, remind us that this is the holiday season, no matter what. So, let’s bake!

Course Dessert

Ingredients
  

  • 2 cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp ground cinnamon
  • ½ tsp salt
  • tsp ground cloves
  • 1 ¼ cups fresh cranberries (roughly chopped by hand with a knife)
  • ¾ cup granulated sugar
  • 1 cup buttermilk
  • 2 eggs
  • ½ cup buttermilk
  • 2 tsp orange zest
  • 1 tsp vanilla extract
  • ½ cup chopped walnuts

Topping

  • 3 tbsp granulated sugar
  • ½ cup cranberries

Instructions
 

  • Preheat oven at 350 degrees F.
  • Grease a 9x5-inch loaf pan.
  • In a bowl, whisk together, flour, baking powder, baking soda, salt, cinnamon and cloves. Make a well in the center and set aside.
  • Toss 1 ¼ cups cranberries with ¼ cup granulated sugar. Set aside.
  • Whisk together buttermilk, the remaining 1/2 cup sugar, eggs, oil, zest and vanilla in a separate bowl until well combined. Pour the mix in the center well of the dry flour mixture and mix until dry ingredients are just moistened.
  • Stir sugared cranberries and walnuts in the batter. Pour batter in the loaf pan and bake for one hour or until a toothpick inserted in the center comes out dry.
